Meet Dianne "Gumbo Marie" Honore, a Creole chef born in raised in New Orleans. She has been performing cooking demonstrations in the Historic French Market, alongside many other ventures, for multiple years. You can typically catch a live performance on Fridays in the fall, or a musical performance from many of the local musicians.

Ms. Honore is a native to the city of New Orleans, having strong roots in the 9th ward. Carrying her family's cooking traditions, having been raised under a family restaurant, Dianne has some secrets up her sleeve that she is willing to give to her listeners, so you don't want to miss out! For example, you can learn in depth about how to cook a roux from scratch, what to look out for, meanings behind a dark or light roux, etc. Today's demonstration is a traditional Creole gumbo, that features a thin textured soup with rice and various proteins.
